Easy Weeknight Meal Idea

When it comes to getting dinner on the table quickly, there are very few things quicker and more family-friendly than a pizza.

Simply grab a couple of pre-made pizza crusts or pieces of flatbread and get creative!

This homemade BLT Pizza is a fabulous fresh meal, loaded with crispy bacon, juicy tomatoes, and fresh peppery arugula.  It’s a healthier (and even faster!) alternative to delivery!

Not only is it delicious, but it’s also so pretty, you’ll want to take a moment to stand back and stare at your creation before you serve it.

The Balsamic Glaze (click here to the recipe for an easy homemade version) adds a touch of sweetness and turns your pizza into a visual masterpiece. 😉

While the oven is preheating, you can cook the bacon quickly in the microwave:

  • 2 10-inch pizza crusts
  • 3-4 tomatoes, thinly sliced
  • ¼ – ½ red onion, thinly sliced
  • 8 slices bacon, cooked and crumbled
  • 2 cups shredded mozzarella cheese
  • 4 cups baby arugula
  • 2 tbsp balsamic glaze

How to Make a Fresh BLT Pizza at Home

First, preheat oven to 450 degrees Fahrenheit.

Next, cook the bacon and blot excess oil off with a paper towel, and crumble.

Distribute the bacon, onions, and tomatoes equally between the two pizzas.

Spread one cup mozzarella cheese on each pizza.

Place the pizzas in the oven and bake until the cheese is melted and bubbly, which should take about 8-10 minutes.

After taking the pizza out of the oven, place 2 cups of baby arugula on each of the pizzas and let stand for a few minutes.

Finally, drizzle each pizza with 1 tbsp balsamic vinegar and serve.

How to Make Bacon in the Microwave

  • Line a microwave-safe plate with two sheets of paper towels.
  • Lay the slices of bacon across the paper towels, making sure not to overlap the slices.
  • Place 2-3 sheets of paper towel on top of the bacon.
  • Microwave on high heat for 4-6 minutes, dependent upon your own microwave’s settings

The Best Pre-Made Pizza Crust

I am currently loving  Trader Joe’s Monteli Organic Pizza Crust.  It’s about 10 inches in diameter and has a chewy, pizzeria texture.

You can use any crust you have available, or even just grab a few pieces of naan bread.  Anything goes with quick and yummy BLT Pizza.
