Why You’ll Love Mediterranean Cauliflower

  • Not only is cauliflower having its moment in the culinary world right now, but it’s in season at the Farmer’s Market. I had a giant head of cauliflower in my CSA bag this week and decided to put it to good use in this tasty combination of Mediterranean flavors.
  • Roasting veggies is the best way to bring out their flavor – they taste SO much better with a little caramelization.
  • Tip: I was walking around William Sonoma a couple of months ago, waiting for my kids to get smoothies. I came across this roasting scoop and made an impulse buy. I had no idea these things existed but it’s a total game-changer for flipping anything that needs to be turned halfway through baking. Roasted vegetables, fries, nuggets, anything! (I also found this less expensive version on Amazon.)
