An absolutely scrumptious Spinach and Feta quiche recipe. Easy brunch or lite dinner recipe that can easily be made ahead and reheated.

Ingredients
1deep dish pie shell – 9 inch
3clovesgarlicminced
1/2small oniondiced
2cupsfresh spinach chopped and loosely packedsubstitute 10 oz package frozen spinach, thawed and squeezed dry if fresh is unavailable
4eggs
1/2cupmilk
1/2cupmayonnaise
1/2cupshredded swiss cheese or mozzarella cheese
4ozfeta cheese
1tbspolive oil
Salt and pepper to taste
Instructions
Step One
Preheat oven to 375 degrees Fahrenheit
Step Two
In a large skillet, heat olive oil and saute the onion and garlic until just soft, about 2 minutes.
While veggies are cooking, place eggs, mayonnaise, and milk in a mixing bowl and whisk together. Gently stir in the spinach leaves and add salt and pepper to taste.
Step Three
Spoon the garlic and onion mixture into the pie crust.
Add swiss cheese to vegetable mixture in pie crust and gently stir to mix.
Top mixture in pie crust with feta cheese
Gently pour egg and spinach mixture into pie crust.
Use a spoon to gently guide eggs to cover quiche ingredients and redistribute the spinach leaves if needed.
Step Four
Place quiche in oven and bake for approx 45 minutes, or until a knife inserted in the center comes out clean.
