Ingredients

What You'll Need to Make a SImple Mediterranean Salad Dressing

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons pepperoncini juice
  • 1 tablespoon lemon juice
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried rosemary
  • Salt and black pepper to taste

What You'll Need to Make the Greek Salad Recipe

  • 9 ounce bag of chopped romaine lettuce
  • 1 can 15 ounces chickpeas (garbanzo beans), rinsed
  • 2 ribs of celery diced
  • 1 cup of grape tomatoes or cherry tomatoes sliced in half
  • 1/3 cup of kalamata olives sliced or chopped
  • 1/3 cup fresh feta cheese crumbled
  • 1/4 cup jarred pepperoncini diced

Instructions

Step One

  • Whisk the salad dressing ingredients together in a small bowl.

Step Two

  • Place the romaine, chickpeas, celery, tomatoes, olives, and pepperoncini in a large salad bowl or on a long serving platter.

Step Three

  • Drizzle the Greek vinaigrette over the salad ingredients and top with the salty feta cheese.
