Caramel Apple Cheeseball

This Caramel Apple Cheeseball is a quick, make-ahead treat that’s perfect for fall. Creamy, a little crisp from the apple, and finished with caramel and pecans, it’s simple, shareable, and always a hit.

Ingredients

  • 8 oz cream cheese softened
  • 1/4 cup powdered sugar
  • 1 Granny Smith apple peeled and grated
  • 3 tablespoons caramel ice cream topping divided
  • 3/4 teaspoon lemon juice
  • 1/8 teaspoon cinnamon
  • ¼ cup finely chopped pecans
  • ¼ cup finely chopped chocolate

Instructions

  • Peel and shred the apple.
  • Beat the cream cheese and powdered sugar with an electric mixer until fluffy.
  • Add the shredded apple, 2 tbsp of caramel sauce, lemon juice and cinnamon. Beat until combined.
  • Stir in about half the chopped pecans and chocolate.
  • Lay a sheet of plastic wrap on a flat surface, then form the mixture into a ball on top of it. Wrap in plastic wrap and chill for 4 hours.
  • Remove the cheeseball from the refrigerator and set on a small plate.
  • Combine the remaining chopped pecans and chocolate, then sprinkle over the cheeseball.
  • Drizzle the remaining caramel over the top, and serve with apple slices or graham crackers.

Notes

If you have a box grater, use the side with the larger holes and shred the apple directly over a small plate or bowl. It keeps the juices contained and makes cleanup easier. You don’t need to be precise, just aim for soft, rustic shreds that will fold easily into the cream cheese mixture.
