A one-pan take on beef enchiladas with black beans, melted cheddar, and cilantro.

Ingredients
1lblean ground beef
1orange bell pepperdiced
1small oniondiced
15ozcan black beansdrained and rinsed
1 ½tablespoonstaco seasoningabout half a packet
1tablespoonminced garlic
8ozcheddar cheeseshredded and divided
12corn tortillascut into triangles
210 oz cans enchilada sauce

Instructions
Dice the bell pepper and onion, and cut the tortillas into triangles, about 8 pieces per tortilla.
In a large skillet, cook the ground beef, bell pepper, and onion over medium heat, breaking the meat apart as it cooks, until the beef is no longer pink.
Stir in the taco seasoning, minced garlic, and black beans.
Stir in the cut tortillas, half of the cheese, and the enchilada sauce. Cover and simmer for 8 minutes, then stir.
Cover again and simmer for another 5 to 7 minutes.
Top with the remaining cheese, cover, and simmer for a few more minutes until melted.
