Ingredients

For the Salmon:

  • 4 salmon fillets about 6 ounces each
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

For the Cowboy Caviar:

  • 1 can 15 ounces black beans, drained and rinsed
  • 1 cup corn fresh, canned, or thawed frozen
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced orange or yellow bell pepper
  • 1/2 cup finely diced red onion
  • 1 jalapeño seeded and finely chopped (optional)
  • 1/4 cup chopped cilantro optional
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

For the Cowboy Caviar

  • In a bowl, combine black beans, corn, peppers, red onion, jalapeño, and cilantro. Add lime juice, olive oil, honey, salt, and pepper. Toss to combine. Chill until ready to use.

For the Salmon

  • Preheat oven to 400°F. Line a baking sheet with parchment. Place salmon fillets on the sheet and brush with olive oil.
  • In a small bowl, mix garlic powder, salt, and pepper. Sprinkle over the salmon.
  • Bake 12–16 minutes, until just cooked through.
  • Serve salmon topped with generous spoonfuls of cowboy caviar.
