Million Dollar Bacon Goat Cheese Appetizer Log

A goat cheese log covered in pieces of sweet and spicy candied bacon, finished with a drizzle of hot honey, and served with homemade crostini.

Ingredients

For the Million Dollar Bacon

  • 12 oz pack of thick-cut bacon
  • 1/4 cup brown sugar
  • 1/2 tablespoon water
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon red pepper flakes optional

For the Crostini

  • 1 baguette
  • olive oil
  • salt and pepper

Additional Ingredients

  • 8 oz log of goat cheese
  • maple syrup honey, or hot honey

Instructions

  • Preheat the oven to 350°F. Line a rimmed baking sheet with foil and set an oven-safe rack on top.
  • Mix the brown sugar, water, black pepper, and cayenne in a small bowl.
  • Lay the bacon on the rack in a single layer. Coat both sides with the sugar mixture and press it in so it sticks. Sprinkle with red pepper flakes if using.
  • Bake for 15 minutes. Flip the bacon and bake another 10 to 15 minutes until crispy. Transfer to a paper towel-lined plate and let cool.
  • Increase the oven temperature to 425°F.
  • Slice the baguette into 1/2-inch pieces and arrange on a foil-lined baking sheet. Brush lightly with olive oil and season with salt and pepper. Bake for 7 to 10 minutes until golden. Let cool.
  • Place the goat cheese log on a serving dish. Break the cooled bacon into pieces and press them into the log. Arrange extra bacon pieces around the base.
