What are Garlic Scapes?
Garlic scapes make their appearance this time of year in CSA Shares and at Farmer’s Markets. So, what exactly is a garlic scape? It’s actually the flower bud of the garlic plant, which is removed to encourage the garlic bulbs to grow. They pretty much taste exactly like garlic, but in a scallion esque form. As with any delicious green that you’re not quite sure to do with, they make an excellent base for a pesto.
How Do I Make Pesto?
Pesto is super quick and easy. Honestly, gathering the ingredients and washing your produce takes longer than making the pesto itself! Simply gather the ingredients, throw them in a food processor and pulse until you reach the desired consistency. You can store in in the fridge for a couple of weeks and use as much or as little as you like to add flavor to your dishes.
A good pesto is like an awesome marinade….a perfect trick to have up your sleeve to spice up any dish.
- 2 cups garlic scapes, cut into 1 inch pieces
- 1/2 cup fresh basil
- 1/2 cup grated parmesan cheese
- 1 tbsp lemon juice
- 1 cup olive oil
- Salt and pepper to taste
Blend all ingredients together in food processor until desired consistency is reached.
