Ingredients

  • 1 Tbsp Extra virgin olive oil
  • 2 14- oz Cans black beans rinsed and drained
  • 1 Tbsp Tomato paste
  • 1 Tbsp Smoked paprika
  • 2 tsp Ground cumin
  • 1/2 tsp Dried oregano
  • 1/2 cup Frozen corn defrosted
  • 1 Tomato finely chopped
  • 1/2 Red onion finely diced
  • 1/2 cup Sour cream
  • 1/2 cup Fresh parsley chopped
  • Tortilla Chips for Serving

Instructions

  • In a medium pot, add olive oil, black beans, tomato paste, smoked paprika, cumin, and oregano.
  • Next, cook over medium heat, stirring occasionally, until the beans are warmed through, and the spices are very fragrant, 8-10 minutes.
  • Remove from heat and mash using a potato masher. If you prefer a smoother texture, you can also blend the dip using an immersion blender.
  • Finally, transfer the dip to a serving plate and top with corn, tomato, red onion, sour cream, and parsley.

Notes

How to Customize Your Dip

  • Sprinkle shredded cheese on top for a gooey, melty finish.
  • Add diced jalapeños or a dash of hot sauce for some heat.
  • Toss some diced avocado or a scoop of guacamole on top for extra creaminess.
