Taco Night in a Bowl – Super Easy Slow Cooker Chicken Taco Soup
This chicken version of a classic taco soup is perfect when you want to make a hands-off, easy dinner in your slow cooker. Not only is this Chicken Taco Soup recipe filled with tender chicken a family favorite, but there’s also no need to brown ground beef like with the original recipe – you can just throw the raw chicken breasts right into the crockpot with the rest of the ingredients.

This flavorful soup is super quick and easy to throw together. When it’s time to serve, set out a variety of toppings and the whole family will love getting to “build their own taco in soup form”. What You’ll Need to Make This Chicken Taco Soup Recipe
- 1 onion, chopped
- 16 oz can of black beans
- 15 oz can sweet corn, drained
- 8 oz can tomato sauce
- 1 14.5 oz cans diced tomatoes with green chilis
- 2 cups chicken broth
- 1 package taco seasoning mix (1.25 oz)
- 1 pound chicken breasts, boneless and skinless
How to Make Easy Chicken Taco Soup
Step One
Add the onion, beans, corn, tomato sauce, diced tomatoes, chicken broth, and taco seasoning to the slow cooker, stirring to combine.
Next, add the whole chicken breasts, pressing them into the liquid mixture so they are mostly covered.
Cook on low heat for 4-5 hours.
Step Two
Remove the cooked chicken from the crock pot and, using two forks, shred.
Finally, return the shredded chicken to the crockpot and stir to incorporate it with the rest of the soup.
Serve warm with your favorite toppings.
Store leftover in an airtight container in the refrigerator for up to 3 days. This great soup is amazing reheated and you might even like it better the next day when the flavors have melded and it’s thickened up a bit!

Homemade Taco Seasoning
I usually keep pre-packaged taco seasoning in my pantry, so I have it on hand to make easy recipes like this one in a hurry.
But, for those times when I realize that I used my last packet of seasoning AFTER I’ve started making this delicious soup, I use this simple recipe to make my own.
Mix these spices together and you’ll have around 3 tablespoons of mix, which is close enough to the prepackaged measurement to just add the entire thing into your soup.
- 1 TBSP chili powder
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp dried oregano
- 1/2 tsp paprika
- 1.5 tsp ground cumin
- 1 tsp kosher salt
- 1 tsp black pepper
