This weekend, I decided to bring a touch of the Mediterranean to our family dinner with these Greek chicken bowls.

What You’ll Need to Make the Greek Chicken Bowls

For the Chicken Skewers

  • 1.5 pounds of chicken breasts, cut into 1-inch cubes
  • ½  cup Greek yogurt
  • 1 TBSP olive oil
  • 1 TBSP red wine vinegar 
  • 4 cloves garlic, minced
  • 1 tsp turmeric
  • 1 tsp kosher salt
  • ½ tsp ground black pepper
  • Bamboo Skewers: 6-inch

For the Bowls

  • 1 package couscous (we love the Near East brand), prepared according to package directions
  • 1 cup tzatziki dip (store-bought or this for homemade)
  • 3 Persian cucumbers, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • 1 cup mixed Greek olives
  • 1 cup fresh feta cheese (the kind that is packed in brine)

Make sure to soak your wooden skewers first, so they don’t burn on the grill.

How to Make the Most Amazing Greek Chicken Bowls

Chicken Skewers

Step 1: First, combine the Greek yogurt, olive oil, red wine vinegar, minced garlic, turmeric, salt, and pepper in a Ziplock bag.

Step 2: Next, add the cubed chicken breast, ensuring each piece is well-coated with the marinade.

Step 3: Let it sit for at least 30 minutes, or for optimal flavor, marinate it overnight in the refrigerator.

Step 4: When you’re ready to grill the chicken, thread it onto presoaked bamboo skewers. 

Step 5: Preheat your grill (or grill pan) on medium-high heat.  Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is beautifully charred and cooked through.

Assemble the Bowls

Step 1: While your chicken cooks, prepare the couscous per the package instructions and arrange it as the base of your bowls. 

Step 2: Next, add a generous dollop of tzatziki on the side. 

Step 3: Distribute the sliced cucumbers, halved cherry tomatoes, sliced red onions, and Greek olives evenly among the bowls. 

Step 4: Now, sprinkle crumbled feta cheese on top for that creamy, salty kick.

Step 5: Finally, place 1 or 2 chicken skewers in each bowl once the chicken is done.

  • Marinate the chicken for at least 30 minutes to infuse it with robust flavors. However, letting it marinate overnight will significantly enhance the taste and tenderness.
  • If you don’t have a grill, a grill pan on the stove works just fine. Make sure it’s very hot before you add your skewers, so you get those lovely charred lines without overcooking the chicken.
