What You’ll Need to Make a SImple Mediterranean Salad Dressing
- 2 tablespoons extra virgin olive oil
- 2 tablespoons pepperoncini juice
- 1 tablespoon lemon juice
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried rosemary
- Salt and black pepper to taste

- 9 ounce bag of chopped romaine lettuce
- 1 can (15 ounces) chickpeas (garbanzo beans), rinsed
- 2 ribs of celery, diced
- 1 cup of grape tomatoes or cherry tomatoes, sliced in half
- 1/3 cup of kalamata olives, sliced or chopped
- 1/3 cup fresh feta cheese, crumbled
- 1/4 cup jarred pepperoncini, diced
Recipe Notes:
