I love homemade salad dressings not only because I get to control the ingredients, but they are so EASY to make.

I recommend not making a ton of dressing at a time, but instead using fresh ingredients each time you make a salad. It doesn’t take a long time to whip up a new batch of homemade dressings and they make any type of salad taste so much fresher than when you use a store-bought version or even a homemade one that’s been sitting in the fridge for a while.

You can make this homemade Greek Salad Dressing in just a few steps. Serve it over this easy Mediterranean Salad and top it with fresh crumbled feta for that traditional tang that’s a signature of Mediterranean cuisine.

What You’ll Need to Make a SImple Mediterranean Salad Dressing

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons pepperoncini juice
  • 1 tablespoon lemon juice
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried rosemary
  • Salt and black pepper to taste

What You’ll Need to Make the Greek Salad Recipe

  • 9 ounce bag of chopped romaine lettuce
  • 1 can (15 ounces) chickpeas (garbanzo beans), rinsed
  • 2 ribs of celery, diced
  • 1 cup of grape tomatoes or cherry tomatoes, sliced in half
  • 1/3 cup of kalamata olives, sliced or chopped
  • 1/3 cup fresh feta cheese, crumbled
  • 1/4 cup jarred pepperoncini, diced

Recipe Notes:

  • Add grilled chicken breasts to the green salad to turn this into a dinner salad.
  • If you have fresh herbs handy, you can use 1 teaspoon of basil leaves and 3/4 a teaspoon of fresh rosemary, minced, in place of the dry herbs.
