Easiest Ever Lemon Poppy Seed Bread

Super Easy Lemon Poppy Seed Bread has only a few ingredients (spoiler: it starts with a cake mix!). It’s a simple dessert you can throw together in a hurry for your family, a party, or even a potluck.

As much as I love to create yummy and super easy meals for my family, I’m not really into baking. So, when I do bake, it’s usually something super simple and, if it starts with a boxed mix like this Lemon Poppyseed Bread, all the better!

Last week, I was in search of a “lemony dessert” and while 2-Ingredient Lemon Bars are my typical go-to, the snow on the ground outside suggested that we needed something with a little more substance.

Thankfully, I have a stash of recipes I’ve collected over the years that turn a simple box mix into something really awesome dessert. And, this one for an easy Lemon Poppyseed Bread (or, let’s be real and call it what it really is – A CAKE😉 ) did not disappoint!

What Will I Need to Make Easy Lemon Poppyseed Bread?

  • A package of Lemon Cake mix
  • 3 -1/2 ounce package of INSTANT lemon pudding mix
  • 2 eggs
  • 1/2 cup of vegetable or canola oil
  • 1 cup of water
  • 2 tsp poppy seeds

How Do I Make Easy Lemon Poppy Seed Bread?

Start by Preheating the oven to 350 degrees and spraying two 8×4 loaf pans with cooking spray. (YES, this recipe makes 2- loaves!)

Next, place all of the ingredients in a large bowl and stir with a wooden spoon until completely mixed together.

Divide the batter between the two loaf pans and bake for 40-50 minutes.

The exact time will depend upon your oven. I usually start checking mine at around 35 minutes simply because I have an unreasonable fear of burning baked goods. When a butter knife (or shish kabab skewer, which is what I usually use because it leaves a smaller hole) stuck in the center comes out clean, you’re good to go.

Let the Lemon Poppy Seed Bread cool for at least 15 minutes before you slice and serve it.

How Do I Make an Easy Lemon Glaze?

Lemon poppy bread is perfect on it’s own, but it takes on an extra special dessert cake aura when you add this optional lemon glaze.

What You’ll Need to Make a Simple Lemon Glaze

  • 1 cup confectioners’ sugar
  •  Approximately 3 tablespoons lemon juice

How to Make Lemon Glaze

Place the confectioner’s sugar in a small bowl and slowly add the lemon juice, whisking it until it’s smooth and completely combined.
