This fresh, healthy, chicken lo mein is a homemade takeout treat! Fast and delicious, it’s ready in only 30 minutes.

  • 1 lb boneless, skinless chicken breasts
  • 16 oz box of dry spaghetti noodles
  • 1 cup soy sauce (divided)
  • 4 cloves garlic, minced 4 tbsp rice vinegar
  • 6 tbsp sesame oil (divided) 4 tbsp olive oil (divided)
  • 1 tbsp sesame seeds
  • 2-4 green onions, diced

For the Marinade

First, combine 1/2 cup soy sauce and 2 tbsp sesame oil in a ziplock bag.

Next, add chicken breasts to the ziplock bag and marinate a minimum of 5 minutes, longer if desired.

You can let the chicken marinade as long or as little as you have time for.  Honestly, sometimes when I’m in a hurry, I just dunk the chicken breasts in the marinade for a few minutes.  Then just brush some marinade on them before you put them under the broiler and then again when you flip them.

For Chicken Lo Mein

Begin by preheating the oven to broil.

Next, boil a pot of water and cook spaghetti noodles per package directions.

Place chicken breasts under the broiler and cook for approximately 10 minutes.  Flip and return to broiler for another approximately 10 minutes, until cooked through.

After the noodles are done cooking, drain and set aside.

In the same pan that you boiled the noodles, over medium heat,  add 2 tbsp olive oil and saute garlic until fragrant.

Add remaining soy sauce, rice vinegar, remaining olive oil, and remaining sesame oil to the pan with the garlic.

Return noodles to the pan and stir until well coated with soy sauce mixture.

Cut chicken into bite-size pieces, add to the pan with noodles and stir to coat.

To serve, top chicken lo mein with green onion and sprinkle with sesame seeds.

I’ve been making this in my Rockcrok from Pampered Chef (no affiliation).  I went to my first Pampered Chef party in forever last year and ended up purchasing this pot.  Does anyone else have one? A little bit pricey yes, but one of the best kitchen purchases I’ve made in a while…it’s become my “go-to” pan.
