We live near Lake Erie, where walleye is plentiful, and this healthy baked recipe is one of our favorite ways to prepare freshwater fish. The fish flakes nicely and is smothered in a delicious lemon butter sauce, while the veggies bake up nice and tender.

What You’ll Need to Make This Easy Recipe For Baked Walleye Filets

  • 8 ounces of snow peas
  • 1 cup of matchstick carrots
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced and divided
  • 4 nice sized walleye fillets (around 6 ounces)
  • 1/4 butter, room temperature
  • 1/4 cup freshly grated parmesan cheese
  • 2 tablespoons fresh lemon juice
  • Salt and lemon pepper, to taste

 Supplies Needed: Foil or pre-cut foil packets  

Recipe Notes:

  • For a pretty presentation, you can top the fish fillets with lemon slices before baking.
  • If you have fresh herbs in your garden, you can add them to the butter sauce to customize the recipe to your family’s favorite tastes. Fresh dill tastes incredible in this recipe.
  • You can give your fish a little heat by replacing some of the lemon pepper with cayenne pepper or sprinkling the fillets with red pepper flakes.
  • If you do not have access to fresh-caught walleye or it’s not available at your grocery store, you can use almost any type of white fish as a substitute in this recipe.

How to Prepare the Walleye Filets

  1. Pre heat oven to 375 degrees Fahrenheit. Either tear 4 pieces of heavy-duty aluminum foil about 15 inches long or use pre-cut pieces of grilling foil. Rinse fish pat dry with paper towels.
  2. Divide the snow peas evenly and place them in the center of each piece of foil. Next, do the same with the matchstick carrot pieces. Drizzle with olive oil and sprinkle with salt and lemon pepper to taste. Divide 3 cloves of the minced garlic amongst the 4 packets – spreading it over the layer of olive oil and seasoning.
  3. Lightly sprinkle fish with salt and lemon pepper and place fillets in the center of each foil packet on top of the veggie mixture.
  4. In a small bowl, mix together the butter, parmesan cheese, lemon juice, and one clove of minced garlic. Divide the butter mixture amongst the four packets and spread over the top of fish.
  5. Seal the foil packets by bringing the longest two sides together and folding them. Next, fold up each end to tightly seal.
  6. Place fish fillets packets at the bottom of a shallow baking dish or on a large baking pan to prevent spills. Place the pan into the preheated oven and bake for 20-25 minutes until the thickest part of the fillet has an internal temperature of 145 degrees F. Remove from the oven and serve immediately.
