How to Make the Best Ever Easy Bacon Quiche Brunch Recipe

This easy recipe for Bacon Breakfast Quiche will quickly become one of your favorite quiche recipes! Packed full of crisp bacon and salty cheese, it’s the perfect meal regardless of what time of day you serve it.

This delicious quiche recipe is one of my go-to’s when I want to serve something a little more special on the weekend than our typical eggs over easy and toast. I’ve never gotten the hang of making homemade pie crust but, thankfully, a premade crust from the grocery store freezer works just as well in this easy recipe.

What You’ll Need to Make Bacon & Cheese Breakfast Quiche

  • 12 bacon strips, cooked and crumbled
  • ½ cup Monterey Jack Cheese, shredded
  • ½ cup sharp cheddar cheese, shredded
  • ½ small onion, diced
  • 4 large eggs
  • 2 cups whole milk
  • ¾ teaspoon salt
  • ¼ teaspoon pepper
  • 1 9-inch premade frozen pie crust

How to Make Bacon Quiche

Step One

  • Begin by preheating your oven to 450 degrees Fahrenheit.

Step Two

  • Place the bacon, cheeses, and onion on the bottom of the pie crust. Using your fingers, gently mingle the ingredients until they are roughly blended.

Step Three

  • In a medium bowl, beat together the eggs, milk, salt, and pepper with a wire whisk.
  • Next, gently pour egg mixture over the ingredients in the pie crust.

Step Four

  • If you’re worried about the pie crust edges getting too dark, you can cover them with a rim of aluminum foil. (My family doesn’t mind a crispy pie crust though, so I usually skip this step if they’re the only recipients of the quiche.)
  • Finally, bake the quiche for 30-35 minutes or until a knife inserted into the center comes out clean.
  • Let the quiche cool for 10 minutes before slicing and serving.

Serve the quiche with a side of fresh fruit, toast, or my favorite recipe for breakfast potatoes.

If you have any leftover quiche, store it in the refrigerator and bring it to room temperature before serving.

How Can I Customize This Easy Quiche Recipe?

This is one of my favorite brunch recipes and sometimes I like to use this basic recipe and customize it to change things up a bit.

Here are some more ideas for quiche ingredients you can swap into the original recipe:

  • Use scallions (green onions) in place of the diced onion bulb.
  • Change out the cheese selection – gruyere cheese and swiss cheese are both great options.
  • Add in bell pepper or chopped fresh spinach if you’d like some extra veggies.
  • Trying to cut back on calories? Omit the pie crust and make a crustless quiche!
