Traditional Barbacoa

To set the record straight, this is not an authentic or traditional barbacoa recipe. It’s a yummy copycat recipe from a chain restaurant that is VERY popular with every teenager I know. I love making this beef barbacoa recipe in my instant pot and setting out various toppings because I know everyone will make a point to make it home for dinner that night!

Traditional barbacoa originated in Mexico. The meat is typically seasoned with a mixture of spices, herbs, and sometimes chili peppers.

The meat is then wrapped in agave or banana leaves and slow-cooked in underground ovens until it becomes very tender and flavorful.

This cooking process infuses the meat with smoky and aromatic flavors, making it a popular filling for tacos, burritos, or served on its own with various toppings and condiments.

1. Prepare the Chipotle Sauce In Your Pressure Cooker:

Combine the beef broth, chipotle peppers, minced garlic, apple cider vinegar, lime juice, dried oregano, salt, and black pepper in your Instant Pot.

2. Cook the Chuck Roast:

Place the chunks of beef into the Instant Pot, ensuring all of the pieces are coated with the barbacoa sauce.

Close the lid and set the Instant Pot to “Manual” mode on high pressure for 60 minutes. The beef should become incredibly tender and easy to shred.

At the end of the cooking time, perform a quick release.

3. Shred the Beef:

Once cooked, remove the barbacoa meat from the Instant Pot and shred it using two forks. The meat should fall apart effortlessly.

4. Simmer the Sauce:

Return the shredded beef to the Instant Pot and let it marinate in the sauce for an additional 10-15 minutes. This step allows the beef to soak up all those delicious flavors.

Store leftover Chipotle barbacoa meat in an airtight container in the refrigerator for up to 3 days.
