Za’atar Rice with Roasted Veggies

Za’atar Rice with Roasted Vegetables is an easy healthy recipe that can serve as a side dish or vegetarian dinner.  Roasted veggies are a simple way to use up all of your extra summer produce and totally shine in this best ever seasoned rice!

What You’ll Need to Make Za’atar Rice with Roasted Vegetables

For the Rice

  • 1 cup uncooked Jasmine or Basmati rice
  • 1 ½ cups water
  • 4 scallions, chopped
  • 2 TBSP butter
  • ½ – 1 tbsp za’atar spice

For the Roasted Vegetables

  • An assortment of cut-up vegetables of your choice
  • 1 tsp za’atar spice
  • Olive oil
  • Salt and pepper

How to Make Za’atar Rice and Roasted Vegetables

Rice Cooker Instructions

  1. Cook the rice according to your rice cooker’s directions
  2. Once the rice is cooked, transfer it to a serving bowl and stir in the butter, chopped scallions, and za’atar spice.

Rice Stovetop Instructions

  1. Place rice and water in a saucepan and bring to a boil over medium heat.
  2. Once the rice is boiling, cover and reduce heat to low.
  3. Allow the rice to cook until it’s tender, which usually takes 15-18 minutes.
  4. Once the rice is cooked, transfer it to a serving bowl and stir in the butter, chopped scallions, and za’atar spice.

If you haven’t cooked with za’atar spice in the past, I recommend starting by adding half a tbsp tasting it, and working your way up to a full tbsp if you still want extra flavor.  I always use the full TBSP (and sometimes a bit more) but I know some people can find it overpowering. 

Roasted Vegetable Instructions

  1. Preheat your oven to 425 degrees Fahrenheit.
  2. Wash and chop your vegetables into ½ inch pieces.  You are going to want to keep all of the veggies pretty uniform in size so they cook evenly.
  3. Place your vegetables on a large baking sheet and toss with a big drizzle of olive oil, one tsp za’atar spice, and salt and pepper to taste.
  4. Place the pan in the oven and roast the vegetables until they are tender (about 20-25 minutes), tossing half way through cooking.

After the veggies are done roasting, add them to the bowl of rice and serve.

How to Serve Za’atar Rice with Roasted Vegetables

This recipe is super versatile.  You can make this with roasted bel peppers and onions (a favorite of our family’s) and serve it as a side with grilled chicken, beef, or pork tenderloin.  Or, you can make it more robust (roasted eggplant, zucchini, squash) and serve it as a vegetarian main dish.
