You know you won’t have time to make something elaborate between work and the event. And every recipe you come across requires more time to make than you have. Or would require reheating.
Before you give up and decide to “pick something up” on the way there, consider this fresh, delicious, and EASY Bruschetta recipe!
You can quickly make a batch the night before, letting the flavors mingle together throughout the day. And the only thing you’ll need to pick up is a baguette for serving!
Although I’ve tried a few other recipes, this Easy Bruschetta is the one I keep coming back to.
Loaded with plump, ripe tomatoes and seasoned with fresh minced garlic and basil leaves, it’s a taste of summer on a slice of baguette.

What You’ll Need to Make This Easy Bruschetta
- 1/4 cup olive oil
- 3 tbsp fresh basil, chopped
- 4 garlic cloves, minced
- 4 medium sized tomatoes, finely diced
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tbsp grated Parmesan cheese
- 1 French Baguette
How to Make Bruschetta
Step One – Mix the Oil Base
First, whisk the oil, basil, garlic, salt, and pepper together in a large bowl.
Step Two – Mix it Up & Refrigerate
Next, add the diced tomatoes to the oil mixture and gently toss to coat. Sprinkle the Parmesan cheese over the top of the tomato mixture and refrigerate for at least one hour.
Step Three – How to Serve the Bruschetta
When you’re ready to serve the Bruschetta, remove it from the refrigerator and bring to room temperature.
Slice the baguette into 24 slices. (If you’d like, you can also toast the slices in your oven until lightly browned.).
Serve the baguette slices alongside the Bruschetta.
